Ingredients
(Yield: 24 servings)
Apple-Cranberry Sauce:
3 tablespoons canola oil
6 pounds golden apples, cut in medium dice
1 pound, 2 ounces yellow onions, cut in medium dice
2 pounds, 4 ounces red bell peppers, cut in medium dice
3 tablespoons grated ginger
3 cups Kikkoman Less Sodium Soy Sauce
3 cups apple cider vinegar
3 cups brown sugar
3 cups dried cranberries
1/3 cup lemon zest, minced
1 1/2 teaspoons nutmeg
1 tablespoon cinnamon
24 (8 ounce) center cut pork chops
1/2 cup Kikkoman Less Sodium Soy Sauce
nutmeg, as needed
white pepper, as needed
Instructions
To make Apple-Cranberry Sauce: In rondo, heat oil over medium heat. Add apples, onions, peppers and ginger and sauté for 5 minutes, or until ingredients start to soften. Add remaining ingredients and bring to a boil; reduce heat and simmer until liquid is reduced to a syrup. Keep warm until service, or chill and heat to order. Yield: 12 cups
For each serving, to order: Sprinkle 1 pork chop with 1 teaspoon soy sauce. Season with nutmeg and pepper. Grill chop on medium-high heat 8 minutes per side; plate. Heat 1/2 cup Apple-Cranberry Sauce and spoon over chop.
